This is one of – if not the – best restaurants in the province. Located under 17th century vaults in Old Québec, Tanière3 offers a culinary journey through several rooms. The thoughtfully-crafted menu revolves around the history of the place, the city and the province, highlighting local products. The experience is meticulously designed down to the smallest details, and the show is found both in the setting and on the plate. A true gastronomic dive into Québec.
The head sommelier, holder of the advanced certificate from the Court of Master Sommeliers, offers a nice selection including some gems, particularly from Alsace. I recommend opting for the carefully-curated pairings, where other types of alcohol are also offered with certain dishes. Special mention goes to mixologist Simon Faucher, who beautifully highlights local products in his creations.
